Dear Friend,

I dodged legions of pedestrians through the crowded streets of Chinatown searching for a Vietnamese spot worth taking my family to for their visit toNew York. Barring the splendor of local Vietnamese Sandwich shops, however, my search continued for years without any luck.

Then, it dawned on me that I could create a neighborhood staple right here in Brooklyn that would offer up my favorite Vietnamese dishes--where fun and fresh eats could meet the spin of Willy-B’s streets!

I am pleased to share this with you. The concept of Silent H would honor the sidewalks of Saigon, the fishing villages of Nha Trang, and the coffee hills of DaLat. More importantly, it would be inspired by generations of my family’s own traditions and comfort foods, which I’ve fallen in love with over and over again.

I want to share with you my mom’s recipes and offer some creative twists and culinary innovations of my own while paying tribute to the authentic flavors of Vietnamese cuisine.

To complement this, I hope to introduce craft beers and esoteric wines from around the world. My philosophy is simple: take care of people the best way you know how. The way for me to do this is through delicious food and drinks.

Will you join me? My name is Vinh, I have a silent "h," and now you do, too!

Some interesting notes:
1. My mom had to quit school at age 9 to sell home made eats on the streets to put her siblings through school. That’s some serious love, and hard core street cred!

2. Look out for Spanish Cava Wine at Silent H, from the Hueget Family and their amazing tradition of wine making www.canfeixes.com. I was lucky enough to visit them this summer.

3. Check out this cool website with a travelogue of Vietnam: http://www.davidmetraux.com/vietnam.html
